The word “pepperoni” is a borrowing of the word pepperoni, which is the plural of pepperoni the Italian term for bell pepper. The first usage of “pepperoni” to refer to the sausage date back to 1919. 1 In Italian the term “peperoncino” refers to spicy and hot peppers.

Pepperoni History

Pepperoni is an Italian-American invention, [1is a dried, cured sausage and has many resemblances with the spicy salamis from southern Italy upon which it is based. This includes salsiccia Napoletana piccante which is an incredibly hot dry sausage from Naples, or the soppressata of Calabria. The major difference is that pepperoni’s flavor is not as spicy, has smaller grains (akin to the spice-free salami of Milan) and is generally more supple with regard to texture and typically made using artificial capping. Pepperoni is produced in mass quantities in America in order to meet the demand for the sausage that is often used in pizza toppings.

Based on Convenience Store Decisions, Americans consume 251.7 million pounds of pepperoni every year which accounts for 36% of pizzas made in the United States. 8 Pepperoni is known to curl up at the edges during the heat of the pizza oven. The pepperoni that is made can be cut into more thick slices so that the edges are curved in a deliberate manner. [9]

Pepperoni can also be used as the filling for the pepperoni roll, which is a well-known regional snack in West Virginia and neighbouring areas. [10]

Within the Canadian province Nova Scotia, deep fried pepperoni that is served on its own (usually served with a honey mustard dip sauce) is a common food served in pubs.
